Bento Box – BBQ Chickpea Wrap



BOX 1: BBQ Chickpea Wrap

1 carrot, sliced
1 whole wheat wrap
1/2 tomato, diced

1/2 can of chickpeas
1/4 tsp garlic powder
1/2-1 cup BBQ sauce
salt/pepper to taste

2 cups shredded lettuce
1 tbsp hummus
1 tsp lemon juice
1 tsp maple syrup

Heat the chickpeas, spices and BBQ sauce on medium heat until the chickpeas have softened and you can lightly mash them. In a small bowl, mix together the hummus, lemon juice and maple syrup. In a larger bowl, add the lettuce and hummus dressing, and stir until the lettuce is fully coated. To assemble the wrap, simple add some chickpeas, diced tomato and lettuce mix into the wrap, then wrap it up tightly. Cut it in half and put it in the box. I added some carrot slices on the side.

BOX 2: Salad

Leftover lettuce, chickpeas and tomato that didn’t fit in the wrap

I used the leftovers from the wrap to make a salad to go on the side. I made a bit of extra dressing and poured it over the top. So delicious!
