BOX 1: Burrito Box
Cooked rice (enough to fill 3/4 of your container)
1/2 cup black beans
diced tomatoes
diced green onions
chopped bell peppers
2 tbsp corn
2 lime wedges
Add the rice into the box, leaving room on one side for the beans. Then, add the other ingredients on top. Put the lime wedges in so they can be squeezed overtop just prior to eating.
BOX 2: Nacho box
1 cup shredded lettuce
1/4 cup salsa
a few handfuls corn chips
Add everything to your box and get excited because you are going to have chips for lunch!! 🙂
