This is hands-down my favourite pasta recipe. I originally had it at a restaurant in New Brunswick, but it wasn’t vegan. So once I went vegan I HAD to recreate it :).

Maple Curry Pasta:
3 tbsp almond butter
1 tbsp tomato paste
2-3 tbsp maple syrup or liquid sweetener
1 tbsp soy sauce
2-3 tsp curry powder
1 tbsp lemon juice
1/2 cup non-dairy milk added as needed
chopped veggies of your choice
2 cups cooked pasta
