Mac and Cheese:
1 1/2 cups pasta
chopped veggies (as much as you want)
3 tbsp vegan butter
1/4 cup all-purpose flour (or brown rice flour for gluten free)
1 3/4 cups non-dairy milk
2 cups vegan shredded cheddar cheese
1/2 tsp smoked paprika (optional)
salt and pepper to taste
1/4 cup bread crumbs to top (optional)
Bake at 400 F for 15 minutes.
