Tomato Basil Soup with Grilled Cheese Croutons


1 small/medium sweet potato, chopped
1/2 white onion, roughly chopped
1 clove garlic, chopped
1 28 oz can diced tomatoes
salt & pepper to taste
handful of fresh basil or 1-2 tsp dried

Cook sweet potato. In a frying pan, cook onions and garlic until translucent and lightly browned. Add sweet potato, onions, garlic and tomatoes to a blender and blend until smooth. Add to a pot and season with salt and pepper. Add basil. Serve hot. Add grilled cheese croutons for best experience.

Grilled Cheese Croutons:
Make a grilled cheese the best way you know how. I love vegan butter or mayo on the bread, Daiya cheddar shreds inside, and the sandwich grilled on a panini press. Then, cut it into bite-size pieces and top your soup with them!
