Apple-Stuffed Pancakes:
1 apple
1 cup flour
2 tbsp sugar
1/2 tsp cinnamon
1/2 tsp baking powder
1/2 cup non-dairy milk
1 tsp apple cider vinegar or lemon juice
1 tbsp oil

Peel apple and slice into medium-thin rounds. Mix together pancake batter ingredients. Dip each apple slice into the batter, making sure they get evenly coated. Cook in a frying pan on medium heat until golden brown, then flip and cook the other side. Let it cook a bit longer than regular pancakes, otherwise the batter might remain a bit raw around the apple slice.
