Banana Bread:
3 ripe bananas
1/2 cup sugar
1/3 cup oil
1 1/2 cups flour
3 tsp baking powder
1 tbsp ground flax seed (optional)
Mash bananas, set aside. Combine flour, baking powder, sugar and flax. Add the bananas and oil and stir to make a batter. Pour into a loaf pan and bake at 400 F (200 C) for 40 mins, checking after 35. Mine took about 40. Insert a toothpick into the centre and remove it right away to test if it is done: if the toothpick comes out clean or with only a few crumbs, it is done. If it comes out covered in batter, it needs a few more minutes.
I was looking for a quick, easy recipe. I made these tonight and they were as promised, easy! One thing I noticed is that they were a tiny bit over done ( I made muffins) after 20 minutes. My oven does tend to bake super fast. I think next time I’ll try them at 375 F, or even 350 F and see what happens. They were very delicious none the less! 💛

I have made this recipe many times and love it. Will it work the same if I switched out the banana for sweet potato? I hope so because I’m getting ready to try it out. I will let you know how it turns out.
