Grilled Panini & Sweet Potato Fries

Sweet Potato Fries:
1 medium sweet potato
1-2 tbsp oil
salt and pepper to taste
1/2 tsp paprika

Peel and cut sweet potato into fry shapes. Toss in the oil and spices. Place in a single layer on a baking tray lined with parchment paper. Bake at 425 F for 30 minutes, flipping after 15.

My favourite panini lately has been vegan cheese, greens and red pepper on a super seedy bread, toasted with vegan mayo on the outside. Watch the video to see how I made this!
