Homemade Vegan Cheese + Grilled Cheese & Bacon Sandwich

Today we are making our own vegan cheese from scratch and turning it into a smoky, gooey grilled cheese and “bacon” sandwich. The cheese recipe was adapted from One Green Planet. The link to the original recipe is below as well. Please keep in mind this DOES NOT taste like dairy cheese. It is made of seeds and starch, not solidified dairy fat. Therefore, do not expect it to taste like “real” cheese. It also does not taste like factory made vegan cheese. This cheese is delicious in it’s own right, but please do not compare it to “real” cheese because (obviously) it will not taste the same. HOWEVER I think this version is even more delicious! Another plus: isn’t as processed as store bought vegan cheese 🙂

VEGAN CHEESE RECIPE:
1/4 cup raw cashews or sunflower seeds (sunflower seeds have a stronger flavour)
1 cup hot water or non-dairy milk
2  tbsp tapioca starch (you can order online easily, it is also easy to find in grocery stores or asian supermarkets)
1 small clove of garlic (optional)
2-3 tbsp nutritional yeast (for cheesiness)
1/2  tsp salt or more if needed
1 tsp fresh lemon juice

SANDWICH:
2 slices of your favourite bread
1 tbsp vegan mayo + 1/2 tsp smoked paprika for outside of bread
1-2 tbsp of vegan cheese
vegan bacon (I suggest coconut bacon or seitan bacon- links to make those can be found below)
