Perfect for breakfast or (with a bit of cream cheeze icing) dessert!
SPICED CARROT MUFFINS (makes 12 muffins) :
2 cups flour
2 tsp baking powder
3/4 cup coconut sugar
1/2 tsp ground ginger
1 tsp ground cinnamon
1/4 cup coconut oil
1/4 cup mashed banana (one small banana)
2 tbsp ground flax seed + 6 tbsp water (mix and let sit for 5 minutes)
1 1/4 cups non dairy milk
1 1/2 cups grated carrot (approx 2 medium carrots)
Bake in 375 F / 190 C oven for 18 minutes or until top is slightly firm to touch.
