Ingredients:
1/2 sweet potato, cooked and diced
4 mushrooms, sliced
1 handful spinach
salt and pepper
1 tbsp oil
Pan fry cooked sweet potato cubes and mushrooms in a frying pan on medium heat with the oil and spices. Cook for 5-6 minutes until mushrooms are cooked and sweet potato is browned. Add the spinach and cook for one more minute. Serve with some extra salt and pepper, avocado toast and your favourite hot drink :).
