Tofu Quinoa Bowls



1/2 block tofu, sliced
your favourite veggies, chopped
1/2 cup dry quinoa + 1 cup water
1 tbsp tahini
2 soy sauce
2 tbsp sugar or liquid sweetener
1 tbsp lime juice
1/4 tsp ground ginger
1/4 tsp garlic powder

Press tofu to remove excess moisture. Place on a baking sheet with parchment paper or foil to prevent sticking. Spray or drizzle with oil if you want it extra crispy. Bake at 400F for 15 minutes. Put quinoa and water in a pot. Bring to a boil, them simmer covered for 10-15 minutes. Steam your veggies in a pot or pan until bright and slightly softened. Remove the tofu from the oven, spread a bit of sauce overtop and bake for another 5-10 minutes.
