Squash Tacos

Squash tacos are a super tasty way to get in your root vegetables for the day! Try them with avocado and curry mayo, it makes them so creamy, fresh and flavourful!

Ingredients:

2 cups cooked cubed squash (I used pre-cooked frozen cubes)
1 tsp oil for pan frying
salt and pepper to taste

corn or flour tortillas
sliced bell pepper
avocado
lettuce

curry mayo:
2 tbsp vegan mayo
1/2 tsp curry powder
1 tsp water or more to thin it out for drizzling
