Candy Cane Cookies

These candy cane cookies were a favourite of mine before I was vegan- so I just HAD to veganize the recipe :)! The chocolate and peppermint go really well together, but if you don’t want chocolate cookies you can leave out the cocoa powder!

Ingredients:

1/2 cup softened vegan butter or margarine (can also use coconut oil but add 1 tbsp water)
1 cup packed brown sugar
1/4 cup plant-based milk ( I use almond)
1 tsp vanilla
1 1/2 cups flour
1/4 cup cocoa powder
1 tsp baking soda
1 tsp baking powder
1/3 cup dairy-free chocolate chips
1/3 cupcandy canes (about 5 mini or 1-2 large) crushed

Preheat oven to 350 F (180 C). Cream together butter and sugar. Add milk and vanilla and combine. Add half the flour, the baking powder and baking soda and combine. Add the rest of the flour and the cocoa powder and stir to form a dough. Add chocolate chips. Roll into balls and dip into the crushed candy cane so the tops are covered. Bake on a baking tray for 10-12 minutes.

  6. I just made these for a potluck but worried I might eat them all myself!! Sooo good! Also, I broke the candy can a bit in my hands then put them in a sealed container and shook it around until it broke more. (A bag works too, just hit it against the counter/floor)
