This samosa wrap is like an easier, healthier version of samosas. Don’t get me wrong, I love a good deep-fried samosa as much as the next person. But these wraps are so tasty and easy to make, they are my new favourite lunch recipe!
Ingredients:
1 tsp oil
1 tsp cumin seeds
1 tsp fennel seeds
1 tsp ground coriander
1/2 tsp turmeric
1/2 tsp ginger
salt and pepper to taste
2 small/medium potatoes, diced
1/2 cup frozen green peas
for the wraps:
tortilla wrap
vegan cheese (optional)
greens
mango chutney (optional but recommended)
Boil the potatoes until they are soft enough that you can easily stick a fork in them. Heat a frying pan on medium heat. Add the oil and spices and cook for about 1 minute. Add the cooked potatoes and frozen peas and stir until coated in the spices. Cook for 5 to 6 minutes. Add to your tortilla with other wrap fillings and enjoy!
