Udon Noodle Stir Fry

This recipe is one of my favourites! Udon noodles are super easy because they come already cooked, so all you need to do is heat them in the pan. Super quick & easy!

Serves 2

Ingredients:

1-2 packages udon noodles
2 cups chopped veggies
1 tsp sesame oil

Sauce:
3 tbsp soy sauce (or more to taste)
2 tbsp maple syrup or brown sugar
2 tbsp lime juice
1 tsp tahini or peanut butter
1/2 tsp sriracha or 1/4 tsp chilli flakes
1/4 tsp garlic powder (optional)

Directions:
Whisk together sauce ingredients. In a medium frying pan on medium heat, add the veggies with a splash of water. Put a lid or sheet pan over the top of the pan to steam the veggies for 2 minutes. Remove the lid, add the sesame oil and noodles. Cook, stirring for about 1 minute. Add the sauce and stir until sauce thickens. Add more soy sauce if needed. Serve hot with a sprinkle of sesame seeds!

  1. So the Udon noodles I found at my local store were not already cooked. I had to boil them in water. Obviously I bought the wrong kind. Are you not able to show the packages of the brand of food you use in your videos? I love them all and have cooked a ton of your recipes but the one thing I wish you would do more of is show a quick view of the food in there packages. Granted they may not carry that in my area but it helps to get a better idea of what I am shopping for. Thanks for all that you do and share!! LOVE FOLLOWING YOU!!!
