Ingredients:
1 tsp oil
2 bell peppers
5-6 vegan “chicken” nuggets (alternatively, use 1/2 to 1 cup of black beans)
1 tsp chili powder
salt and pepper to taste (about 1/4 tsp each is a good starting point)
8-inch corn or flour tortillas (usually called medium size)
salsa
vegan cheese
greens
lime for serving
Directions:
Add oil to a medium frying pan on medium heat. Cook the vegan “chicken” for a few minutes, chopping it up into strips. Cook until crispy. Add the bell peppers, chili powder salt and pepper and cook until peppers are bright and softened, about 3 minutes. Assemble your tortillas and enjoy!

It depends how full you fill your fajitas but it made about 6 for us! I like to not fill them too much or it falls apart haha. <3
