This pesto goes great on pasta, quinoa, and sandwiches but today we are using it my favourite way- pizza! Enjoy!
Pesto:
2 cups basil leaves
3/4 cup walnuts
1/4 cup olive oil
1-2 cloves garlic
1/4 cup nutritional yeast
juice of 1/2 a lemon
Add all ingredients to a blender or food processor and blend until smooth. Add to a pizza crust and top with vegan cheese and cherry tomatoes. Bake according to crust instructions. Left over pesto will turn brown as it oxidizes so it’s best to use right away.
