Spicy Sausage Zucchini Noodles:
1 vegan sausage (I use the Yves Spicy Italian Sausages), sliced
1 tsp vegan butter
1 clove garlic, minced or chopped as I did in the video
salt and pepper to taste
Spiralize the zucchini into noodle shapes. You can also sometimes find pre-made zucchini noodles in grocery stores! Add the vegan butter and garlic to a pan. Saute a few minutes, then add the slices of sausage and fry until crispy and browned. Add the zucchini noodles and cook a few more minutes. Do not overcook. Serve with salt and pepper (to taste).
