Broccoli Salad

1 large head of broccoli, chopped into florets (about 4 cups), option to do half cauliflower florets
1/3 cup chopped red onion
1/3 cup vegan cheddar shreds
3 tbsp faux-bacon bits

Dressing:
1/2 cup vegan mayo
1/3 cup organic granulated white sugar
3 tbsp white vinegar

Mix together salad ingredients in a bowl. In a separate bowl, whisk together dressing ingredients. Pour dressing over salad and toss to combine. Allow to sit in refrigerator for at least a few hours before serving. Best if made the night before.
