Vegan Peppermint Mocha

There’s nothing better than putting on your coziest socks, curling up with a blanket and making a warm mug of a holiday-inspired drink when the weather gets cold.

Today I wanted to share my current obsession which is a vegan peppermint mocha. It’s perfect for the holiday season and I hope you love it as much as I do!

This post is in collaboration with the Philips 3100 espresso machine. This machine makes creating amazing beverages super easy. I love that you just pour in the coffee beans, press a button and in a minute you can have a hot, café-worthy drink right in your own kitchen.

The coffeemaker has 5 preset drink settings, which means I can switch it up and make something new every day of the week so I never get bored. The grinders are 100% pure ceramic which are extremely hard and precise, and guarantees fresh aromatic coffee for at least 20,000 cups. To put that in perspective, that means you could have 2 cups of coffee a day for the next 26 years!  The Philips 3100 also comes with a milk carafe, so you can make all kinds of milk-based beverages. The carafe froths the milk twice, then pours a splash free creamy layer into your cup at just the right temperature. It can also be stored conveniently in your fridge.

Lastly, I love how the spout is adjustable to fit every mug. I am a mug collector which means I have mugs in all shapes and sizes and I love that it’s easy to fit the machine for every new mug.

Vegan Peppermint Mocha

Ingredients

  • 1 – 6 oz. coffee from the Philips 3100
    1 tbsp cocoa powder
  • 2 tbsp sugar
  • 1/4 cup almond milk
  • 1/4 tsp pure peppermint extract
  • handful of vegan marshmallows

Instructions

  1. Use the coffee function on the Philips 3100 to brew a 6 oz. coffee in a large mug.
  2. Add the cocoa powder and sugar and whisk to combine.
  3. Use the steamed milk function to add the almond milk. Then add the peppermint extract and vegan marshmallows.
  4. Enjoy!
