An oven-roasted veggie sandwich with hummus, marinara and melty cheeze.
4 pieces of bread
1/2 onion, sliced
1/2 bell pepper, sliced
4 mushrooms, sliced
1 tbsp oil
pinch of salt + pepper
handful of spinach
1/4 cup hummus
1/4 cup marinara sauce
1/4 cup shredded vegan cheeze
Preheat oven to 400 F.
Add onion, bell pepper and mushrooms to a baking dish. Toss with oil, salt and pepper and bake for 15 minutes, stirring halfway through.
Place the slices of bread on a baking sheet. Spread 2 slices of the bread with 2 tbsp hummus each. Add 2 tbsp marinara to each of the other 2 slices of bread. Evenly divide cheeze and sprinkle on marinara sides.
Add the cooked vegetables and bake in the oven for 5 minutes or until cheeze is melted. Add spinach, then assemble sandwiches. Enjoy!
