An oven-roasted veggie sandwich with hummus, marinara and melty cheeze.
- 4 pieces of bread
- 1/2 onion, sliced
- 1/2 bell pepper, sliced
- 4 mushrooms, sliced
- 1 tbsp oil
- pinch of salt + pepper
- handful of spinach
- 1/4 cup hummus
- 1/4 cup marinara sauce
- 1/4 cup shredded vegan cheeze
- Preheat oven to 400 F.
- Add onion, bell pepper and mushrooms to a baking dish. Toss with oil, salt and pepper and bake for 15 minutes, stirring halfway through.
- Place the slices of bread on a baking sheet. Spread 2 slices of the bread with 2 tbsp hummus each. Add 2 tbsp marinara to each of the other 2 slices of bread. Evenly divide cheeze and sprinkle on marinara sides.
- Add the cooked vegetables and bake in the oven for 5 minutes or until cheeze is melted. Add spinach, then assemble sandwiches. Enjoy!
