Delicious, hearty almond butter and oatmeal cookies with dark chocolate chips! I love how easy and quick these are to make! My new favourite cookie recipe when I want something *slightly* more nutritious. Almond Butter Oatmeal Cookies with Dark Chocolate Chips

Description

Delicious, hearty almond butter and oatmeal cookies with dark chocolate chips. A crispy cookie with slightly chewy center.


Ingredients

  • 1/2 cup coconut oil
  • 1/4 cup almond butter
  • 1 cup brown sugar or coconut sugar
  • 1/4 cup nondairy milk
  • 11/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt (or more if your almond butter is unsalted)
  • 2/3 cup dairy-free dark chocolate chips

Instructions

  1. Preheat oven to 350 F.
  2. In a large mixing bowl, combine coconut oil, almond butter and brown sugar and beat until fluffy.
  3. Add nondairy milk and stir to combine.
  4. Add flour, oats, baking powder, baking soda and salt. Stir until combined into a thick dough. Stir in chocolate chips.
  5. Form 1-1/2 tbsp size balls and space evenly on a baking tray, leaving room to spread.
  6. Bake 10 minutes until golden brown on top. Allow to cool a few minutes before transferring to a wire cooling rack.

    These were amazing. I used peanut butter instead of almond butter and it was delicious.

    • Hey liv! These cookies taste great, I have made them a few times now. One question, do you leave the dough in balls when you bake them? Mine do not spread at all. Just wondering how to make them look more like your picture! Thanks xx

      • I do leave them in balls! Quick question – is your nut butter super oily and runny or more thick? I find the runnier it is, the more they spread! I hope that helps!

  10. Amazing!! I did change the recipe a bit. I had peanut butter, so I used that. I wanted to use up the rest of the jar of pb, so I did a half of a cup of pb, and 1/4 margarine. They turned out great.

  11. Is the coconut oil supposed to be melted or room temperature? These turned out very dry for me. I think next time I’ll try margarine instead of coconut oil.

  12. Made these cookies today and they are divine! I love how simple they are to whip together and that you don’t necessarily have to chill the dough. I don’t always have almond butter on hand, but I’m so glad I did because the flavour it adds is just *chef kiss* Can’t wait to make these with other yummy add-ins.

    These cookies are absolutely amazing.My kids are picky when it comes to eating (yes even with sweets), but they absolutely loved these cookies. I would highly recommend.
