Lighter Lunch/Snack Ideas

I think the most commonly asked question I get is “What are some vegan snack/lunch ideas for bringing to work/school/on the go?” Trust me, I get it. Trying to figure out what to pack for lunch everyday that will be filling, healthy and also tasty is tough!

Are you a sweet or savoury person? Today I am partnering with Ryvita as part of their #fibrefit squad to show you some healthy ways to get more fibre with these tasty crisp bread ideas. Perfect for a light lunch or even snacking on the go! 

I am an even split between a sweet and savoury person. So, of course when the Ryvita team asked me to come up with some plant-based topping ideas I had to do some of both! All of these topping combinations are absolutely delicious and I love the idea of having a few savoury crisp bread toppings for lunch with a sweet “dessert” style one too!

My current favourite crisp bread flavours are the Sesame Rye, Pumpkin Seeds & Oats and Red Quinoa & Sesame!

Top left: hummus, cucumber, cracked black pepper

Top right: sunflower seed butter, blueberries and hemp hearts

Bottom left: chocolate hazelnut butter with coconut shreds and dairy-free chocolate chunks

Bottom right: homemade herbed yogurt dip (plain coconut yogurt with chopped mixed fresh herbs), carrot ribbons and cracked pepper
