Fresh salsa is such a delicious summer recipe and I enjoyed it so much when it was too hot and I didn’t want to cook. There are so many variations and ways to make it – the options are truly endless!
Let’s talk about this peach salsa. It takes honestly 2 minutes to make and is perfect to use up any peaches you have lying around as summer comes to a close! I quartered the tomatoes and peaches, but other than that you literally just throw everything into the food processor and process on a low speed until your perfect salsa consistency is reached. It takes no time at all and then you have a delicious salsa to enjoy with corn chips or on top of sheet pan quesadillas!

Fresh Peach Salsa

Just peachy! Summer is officially winding to a close. Time to use up those last few peaches you have and this salsa is the perfect way to do it.
Ingredients
- 6 roma tomatoes, quartered
- 1 jalapeño, deseeded
- 2 cloves of garlic
- 1/2 red onion
- 3 peaches, pitted and quartered
- Juice of 1/2 lime
- 1–1/2 tsp salt
Instructions
- Pulse all ingredients in a food processor until finely chopped and desired salsa consistency. I prefer super small chunks!
- Enjoy! Store in an airtight container or jar up to 5 days.
