I’m going to be honest, I never thought I would do a recipe for Hasselback potatoes. Why? Well, a few reasons. First of all, they’re all over Pinterest. Which immediately makes me think, okay, these are SO overdone. Second, I thought they looked annoyingly complicated for what seemed like little payoff.
However, Greg convinced me to try them, and as you can see, I ate my words big time. These things are GOOD. I mean REALLY GOOD. I’m not a huge baked potato lover, because I prefer my potatoes crispy and not just kinda dry and fluffy (I know, I know.) And, well, these things are like crispy, baked, flavourful, buttery, golden, little pockets of joy. I’m being dramatic because they deserve the hype and I feel bad I judged them before trying them.
