Posting these Maple Cinnamon Sheet Pan Sweet Potatoes before Christmas in case you want to switch up your sides this year! I am always a fluffy mashed potatoes kind of girl. But these sweet potatoes will be making an appearance on Christmas Day, because they are so dang good! These sheet pan sweet potatoes are sweet, with a hint of cinnamon and have the most delectable crispy edges. Leaving the skin on helps with the crispy edges while keeping the middles tender and perfect.

I can’t believe Christmas is only a few days away. I have been done my shopping for ages now and my Christmas dinner menu has been planned for a few weeks now at least.

These sweet potatoes are so easy!

You just wash your sweet potatoes, slice into rounds. Layer onto a sheet pan, drizzle with the sauce and bake. No flipping required… it really could not be easier to get the most perfect sweet potatoes.

Description

The easiest, slightly sweet and lightly cinnamon-spiced sweet potatoes with crispy edges and soft tender centres.

Ingredients

  • 3 medium sweet potatoes, skins on, sliced into rounds
  • 3 tbsp oil
  • 1 tbsp maple syrup
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1 tsp lemon juice (optional)

Instructions

  1. Preheat oven to 400 F. Line a large rimmed baking sheet with parchment paper.
  2. Layer sweet potatoes on pan, slightly overlapping.
  3. In a small bowl, whisk together oil, maple syrup, spices, salt and lemon juice. Drizzle evenly overtop of sweet potatoes, or use a basting brush to brush overtop.
  4. Bake for 40 minutes, until potatoes are tender.
