Description
The easiest, slightly sweet and lightly cinnamon-spiced sweet potatoes with crispy edges and soft tender centres.
Ingredients
- 3 medium sweet potatoes, skins on, sliced into rounds
- 3 tbsp oil
- 1 tbsp maple syrup
- 1/2 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1 tsp lemon juice (optional)
Instructions
- Preheat oven to 400 F. Line a large rimmed baking sheet with parchment paper.
- Layer sweet potatoes on pan, slightly overlapping.
- In a small bowl, whisk together oil, maple syrup, spices, salt and lemon juice. Drizzle evenly overtop of sweet potatoes, or use a basting brush to brush overtop.
- Bake for 40 minutes, until potatoes are tender.
