Double Chocolate Protein Mug Cookie

I am so excited to be sharing this recipe for this Double Chocolate Protein Mug Cookie with you today! 

It has been exactly 1 month since Greg and I started our new healthy lifestyle. Obviously we weren’t horribly unhealthy before. But, one night a few weeks before Christmas we were laying in bed talking about how we just didn’t feel and look our best. Don’t get me wrong- we both don’t hate our bodies or our life at all. But we did acknowledge that we weren’t as active as we should be, and felt old for only being 26 & 27. 2020, lockdown, stress etc had a big impact on our habits. I really felt like my body had aged years from the beginning of 2020 to August, even though it had been a few months. My back was sore often, I felt very unfit, and generally kind of just blah. 

ANYWAY. We decided that we wanted to commit to being active every day. We were going to start slow, and if one day its some yoga, another day its a walk, and another day a bit more of an intense workout-fine. But something active to get our body moving every day. I always struggled with scheduling and rest days and staying motivated to work out x days a week. So just saying we would do something every day seemed easy enough to keep track of and stay motivated.

So it has officially been 1 month of being active daily and we feel so much better! We’ve also altered our eating habits slightly, eating smaller meals and more snacks throughout the day. This mug cookie recipe is currently one of my favourite snack/desserts when I’m craving something sweet. I like adding protein powder because it makes it a bit more filling. 

I love mug recipes because they are single serving, so you don’t have to spend a lot of time baking a big pan of something. You also know and can control exactly what’s in it. This cookie is absolutely delicious with a scoop of coconut ice cream and some fresh berries like blueberries or strawberries. 

Which protein powder should I use?

My favourite protein for this recipe is the Tropeaka chocolate flavour protein. It has an amazing smooth texture, isn’t too sweet and adds an amazing fudgey flavour. Use whichever protein is your favourite!

Double Chocolate Protein Powder Mug Cake

Description

Protein double chocolate cookie in a mug. Vegan and delicious!


Ingredients

  • 1 tbsp vegan butter or coconut oil 
  • 1 tbsp brown sugar
  • Splash vanilla 
  • 2 tbsp milk
  • 2 tbsp flour
  • 1 tbsp protein powder 
  • 1/2 tbsp cocoa
  • 1 tbsp dairy-free chocolate chips

Instructions

  1. In a microwave-safe mug, add the vegan butter and brown sugar and cream together. Add the vanilla and milk and stir to combine.
  2. Add the flour, protein powder, cocoa powder and chocolate chips. Stir to combine.
  3. Microwave for 45 seconds to 1 minute. Your vegan mug cookie cake should be set on top and slightly firm to the touch. Don’t overcook or it will be too dry. Mine takes 45 seconds but depending on the wattage of your microwave it could take a bit more or less time. Serve with vegan vanilla ice cream and fresh berries!

Notes

  • My favourite protein for this recipe is the Tropeaka chocolate flavour protein. It has an amazing smooth texture, isn’t too sweet and adds an amazing fudgey flavour. Use whichever protein is your favourite!
  • Most mugs are around 12 ounces or larger, and those should all work (make sure it’s microwave-safe). Don’t use a small mug like 8 ounces or smaller, or the mug cake may overflow.
  • To make two servings, double the batter and divide it evenly across 2 mugs and, for best results, microwave each mug separately.
  • Prep Time: 5 minutes
  • Cook Time: 1 minute
