Today I am sharing a super fun cocktail recipe to celebrate Friday and Valentine’s Day weekend! This Vanilla Rootbeer Float cocktail is every bit as fun as it sounds. I actually am not the biggest pop/soda fan in general, but I usually make an exception for cocktails. I don’t think I’ve ever had a glass of coke or Pepsi- but maybe had a few rum and cokes. But that’s it! Pop was not my thing. However, bubbly drinks in delicious cocktails I can do. Especially when they involve vanilla creamer and coconut ice cream!

What’s not to love about taking the childhood favourite rooter float and turning it into an adults-only cocktail. Bonus- make these for the whole family and just leave the rum out of the kids’ drinks!

You can use your favourite rum in this drink – my favourite is Bumbu. I’ve also used Bourbon in this cocktail when I didn’t have any rum and it was pretty good too! This recipe calls for vanilla vegan creamer, but if you prefer your drink to be a bit less sweet, use unsweetened creamer or milk and a splash of vanilla extract instead.

Vanilla Rootbeer Float Cocktail

Description

A cocktail twist on the adored rootbeer float!


Ingredients

  • 1 1/2 cups rootbeer
  • 2 shots (approx 6 tbsp) your favourite rum
  • 2 shots (approx 6 tbsp vegan vanilla creamer)
  • 2 scoops vegan vanilla ice cream
  • ice

Instructions

  1. Add some ice to each serving glass. Add 1 shot of rum, 1 shot of creamer and 3/4 cup rootbeer to each glass.
  2. Top with a scoop of ice cream. Enjoy immediately!
