Blackberry, Brie & “Bacon” Vegan Grilled Cheese: all the flavours you love in a charcuterie board, in the form of a grilled cheese! This sandwich is SO good and a perfect balance of savoury and sweet. The vegan bacon adds a crunchy texture and perfectly saltiness, layered between two slices of soft sourdough bread with local blackberry jam, and vegan cashew-based brie. This sandwich is pan-fried in a cast iron skillet until the cheese is melted and the bread is golden and crispy. Grilled cheese was always my go-to lunch as a kid, and where I found all of my creativity in the kitchen! I had to throw together different ingredients that I found in the fridge, so naturally, I gravitated towards purchasing better ingredients as I found out what worked and what didn’t! Now, working with all vegan ingredients can be a challenge, but when you hit something you like, such as this amazing combo, there’s nothing better!

Description

Savoury and sweet vegan grilled cheese sandwich stuffed with nothing but the best ingredients, from local blackberry jam and creamy cashew brie cheese,  to plant based seitan bacon from our local vegan “butcher” shop! This hits all your cravings at once and I can’t wait for you to try!

Ingredients

  • 2 slices sourdough bread
  • 2 tbsp blackberry jam
  • 2 tbsp vegan butter
  • 3 slices vegan cheese
  • 3 slices vegan “bacon” we love Real Fake Meats or Lightlife
  • 3 tbsp vegan cashew-based brie

Instructions

  1. Butter one side of both slices of bread.
  2. Spread half of the jam on one slice of bread.
  3. Add 3 slices of vegan cheese. Layer on 3 slices of vegan bacon and vegan brie.
  4. Spread remaining half of jam on bottom of second slice of bread.
