Chewy Brown Sugar Blueberry Crackle Bars

These Chewy Brown Sugar Blueberry Crackle Bars are such a fun treat to bake for fall! Chewy brown sugar bars with crackle top and crispy edges, bursting with blueberries. They are easy to mix up, made with basic pantry ingredients and frozen blueberries (I had some frozen left over from the summer, but feel free to sub with another berry or even apple chunks to make it more seasonal!). The base is the most basic ingredients: flour, sugar, oil, cinnamon, vanilla, salt and baking powder. The one secret ingredient is an egg replacer called aquafaba which is actually just the liquid from a can of chickpeas! It is so wonderful as an egg replacer in baked goods, and very budget friendly! Perfect if you use a lot of chickpeas because you can freeze it in ice cube trays and then you have egg replacer whenever you need it. Perfect with a morning cup of coffee or drizzled with some frosting for a delicious dessert.

We are very much having one of those *busy* weeks where it feels like all you do is work but also nothing gets done. I feel like that is always the way things go when you arrive home from a trip! We managed to get through the mountain of laundry we had sitting in our bedroom, but now that its clean I feel like I can see the 1000 other things I really am behind on. Like dusting…

I made this recipe when Greg’s sister Madison was over and we wanted to do some fall baking. I made a blueberry version and she did apple. She brought it to a potluck party that night and everyone loved it! So I will have to make an apple version soon. With cream cheese frosting! Drool.

These bars couldn’t be any easier, I promise! Basically, you just mix together the batter (it’s actually more like a dough, it is super thick) and then add the blueberries. You don’t have to thaw them, they can go right in frozen! Then just spread into your baking pan and bake until golden and crackly on top. These bars have the most exquisite chewy center, crackly top and crispy edges. I couldn’t stop eating them!

Description

Chewy brown sugar bars with crackle top and crispy edges, bursting with blueberries.


Ingredients

  • 1/4 cup aquafaba (the liquid from a can of chickpeas)
  • 1 cup vegetable oil
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 cups frozen blueberries

Instructions

  1. Preheat oven to 350 F. Grease and flour a 9 x 13 inch metal baking pan.
  2. In a mixing bowl and hand mixer, mix the aquafaba and oil until creamy and bubbly.
  3. Add the sugar and vanilla and beat until smooth.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon and salt.
  5. Add dry ingredients to wet and stir until just combined. Add blueberries and fold in until just combined.
  6. Spread into prepared baking pan. Bake in preheated oven about 45 minutes, until golden brown and cracked on top. Let cool at least 10 minutes before slicing and serving. Enjoy!
