Description
Chewy brown sugar bars with crackle top and crispy edges, bursting with blueberries.
Ingredients
- 1/4 cup aquafaba (the liquid from a can of chickpeas)
- 1 cup vegetable oil
- 1 cup white sugar
- 1 cup brown sugar
- 1 tsp vanilla extract
- 2 tsp ground cinnamon
- 1/2 tsp salt
- 2 cups all-purpose flour
- 1 tsp baking soda
- 2 cups frozen blueberries
Instructions
- Preheat oven to 350 F. Grease and flour a 9 x 13 inch metal baking pan.
- In a mixing bowl and hand mixer, mix the aquafaba and oil until creamy and bubbly.
- Add the sugar and vanilla and beat until smooth.
- In a separate bowl, whisk together flour, baking soda, cinnamon and salt.
- Add dry ingredients to wet and stir until just combined. Add blueberries and fold in until just combined.
- Spread into prepared baking pan. Bake in preheated oven about 45 minutes, until golden brown and cracked on top. Let cool at least 10 minutes before slicing and serving. Enjoy!
