Garlic Parmesan Fluffy Mashed Potatoes

These potatoes are such a great side dish that everyone will love, vegan or not. I have had my fair share of sad vegan mashed potatoes that were just potatoes – no butter or milk. That’s normally what happens when people hear there is a vegan coming for dinner! But never fear, these mashed potatoes will not disappoint, and will be loved by everyone at your dinner!

Garlic Parmesan Fluffy Mashed Potatoes

Creamy, savoury, cheesy and super fluffy vegan mashed potatoes: the perfect side dish for your holiday feast!


  • 3 lbs white potatoes, peeled and chopped
  • 1 cup coconut milk
  • 5 cloves garlic, minced
  • salt and pepper
  • 1 cup shredded vegan parmesan cheese
  • optional: parsley for garnish


  1. Add potatoes in a large pot and cover with water until just submerged.
  2. Bring to a boil on high heat, then reduce heat slightly and boil for about 10 nin7tes, until potatoes are nice and soft. Drain and set aside.
  3. In a medium pot on medium heat add the coconut milk and garlic and simmer low for a few minutes until fragrant.
  4. Add coconut milk mixture, a good pinch of salt and pepper and the cheese to the potatoes and mash/stir until creamy and combined. Taste and add more salt and pepper if needed.
  5. Serve hot with parsley for garnish. Enjoy!

  1. Do you have a good, cheesy recipe for vegan Parmesan cheese? I’ve made a couple but they were a disappointingly bland. Thanks in advance

  2. can i use unsweetened oat milk for this recipe instead of coconut milk?

  3. Can this recipe be prepared the day before? At what stage would you stop and refrigerate and then continue just before serving. Possibly pop on the oven to heat up?

    • You could definitely make it all the day before, but just make a bit of extra garlic coconut milk mixture, then add that the next day when you reheat it on the stove to rehydrate and make them fluffy again :). Hope that makes sense! Adding a bit more liquid as you reheat will make it super easy to stir and get nice and fluffy.
