Another holiday side dish! These spiced, glazed, sweet and slightly tangy carrots are the perfect supporting role for your holiday dinner. These are from another episode of Liv’s Holiday Menu on YouTube!

I feel like sometimes sides get overlooked… but for me, they’re usually the best part of a dinner! Give me roasted veggies, fluffy mashed potatoes and gravy and I am a happy camper! These carrots are super flavourful and delicious, but not overpowering at all. I kind of hate when there’s one part of the holiday dinner that stands out with a strong flavour, because I like the whole meal to fit together nicely in flavour profiles. Does that make sense? Is it weird?

In any case, these carrots are also your perfect side dish because they are super easy to make and take less than 30 minutes. You can even prep them the night before and then boil just before serving so they taste freshly made!

To make ahead:

  1. Complete all steps up to broiling. Simply store the glazed, pre-cooked carrots in an airtight container in the fridge overnight.
  2. Then, add to your baking sheet and broil for 10 minutes before serving. Tadaa! So simple.

Glazed Spiced Carrots

Description

Carrots steamed then tossed in a buttery, sweet and tangy spiced glaze and topped with flaky salt and fresh herbs.


Ingredients

  • 2 lbs carrots, halved, then sliced lengthwise (see video)
  • 1/4 cup vegan butter
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/4 tap garlic powder
  • generous pinch of salt to taste (plus coarse salt for garnish)

 

  • optional: fresh herbs or micro greens for garnish (add just before serving)

Instructions

  1. Place carrots in a pot or frying pan fitted with a steamer basket and a few inches of water in the bottom. Steam on high heat for 10 minutes, or until carrots are fork-tender.
  2. Drain carrots and set aside.
  3. In a frying pan on low heat, add the butter. When melted, add all other ingredients and stir to combine. Add the carrots and stir to coat.
  4. Put oven on Broil setting. Line a sheet pan with parchment paper.
  5. Add carrots to prepared sheet pan and bake in oven for about 5-10 minutes, until just starting to crisp and brown.
  6. Remove from oven and add to serving dish. Garnish with flaky salt and fresh herbs/microgreens if using. Serve immediately.
