I feel like sometimes sides get overlooked… but for me, they’re usually the best part of a dinner! Give me roasted veggies, fluffy mashed potatoes and gravy and I am a happy camper! These carrots are super flavourful and delicious, but not overpowering at all. I kind of hate when there’s one part of the holiday dinner that stands out with a strong flavour, because I like the whole meal to fit together nicely in flavour profiles. Does that make sense? Is it weird?
In any case, these carrots are also your perfect side dish because they are super easy to make and take less than 30 minutes. You can even prep them the night before and then boil just before serving so they taste freshly made!
To make ahead:
Complete all steps up to broiling. Simply store the glazed, pre-cooked carrots in an airtight container in the fridge overnight.
Then, add to your baking sheet and broil for 10 minutes before serving. Tadaa! So simple.
