From the creamy texture, to the pure comforting warmth of the meal after a long day at school. This Vegan Hamburger Helper recipe is a throw back to those youthful days before responsibilities, taxes and having to do two workouts a day just to stay in the same pant size! I joke of course, but this meal really did bring me back and hit me with nostalgia for a good home cooked dinner! Using some of my favourite flavour combos, this Vegan Hamburger Helper recipe is sure to leave a lasting impression, and get you through those cold winter days that remain!

The Inspiration:

I don’t know about you, but the second snow starts to fall, I start brainstorming all the cozy pasta, soups, and hot plates I can possibly cook because here in Canada, we are pretty much cold for 6 months straight! Of course, it’s now almost April and we’re finally starting to see hints of spring around the corner, but I couldn’t pass up this opportunity for one more pasta dish for those still-cold evenings! This Vegan Hamburger Helper recipe has gotten us through the last few weeks with its smooth texture, and fall-apart-in-your-mouth “beefy” crumble.

I’ll let you in on a little secret…

The trick to getting that perfect soft yet “beefy” texture for this Vegan Hamburger Helper is to cook the vegan ground beef from frozen in a medium sauce pan with veggie broth to let simmer and absorb. Not only does it add a little more depth of flavour, but it also doesn’t over-cook the meat the point that it is dry before the sauce has a chance to seep through the rest of the dish!

Not only that, but this recipe allows you the make the sauce as creamy as you want for a little extra texture profile you didn’t get in the original Hamburger Helper! This recipe uses a mix of milk, spices, and flour to make the cream sauce; so simply adding more of it to the frying pan while you cook will create a sauce perfectly to your liking!

I know what you’re thinking:

This guy clearly likes pasta… what’s his obsession with reliving his youth through food and this Vegan Hamburger Helper recipe? But hear me out!  Flavours and smells have an ability to transport you to a time where everything was simple. Don’t get me wrong, I wouldn’t pass up or speed up the life I live right now. But there’s no reason to deprive ourselves of great memories we have in relation to food! Vegan Hamburger Helper

Description

This Vegan Hamburger Helper recipe is going to be your new weeknight best friend! Creamy, “meaty” and a punch of flavour that takes very little time, and is sure to have you going back for seconds!


Ingredients

  • 3 cups short pasta of choice – I used rotini
  • 1 package @theverygoodbutchers ground beef
  • 1 tbsp plant based butter
  • 1/3 cup chopped shallots
  • 1 cup vegan broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/4 cup flour
  • 1/2 cup plant based milk
  • 1/3 cup nutritional yeast
  • 1 tbsp bbq sauce
  • 1 tbsp parsley
  • salt and pepper to taste

Instructions

  1. Bring a pot of water to boil, and add the pasta. Cook according to package, and strain.
  2. In a medium frying pan over medium heat, add your vegan butter and minced shallots. Cook until onions are translucent.
  3. Add the full package of frozen vegan beef, garlic powder, onion powder, smoked paprika, cayenne pepper and broth. Cover the pan and let simmer on medium heat for 5 minutes.
  4. Remove lid, and finish breaking up the ground beef into small bite-size chunks. Add the flour, cashew milk nutritional yeast, parsley and bbq sauce. Stir until combined.
  5. Add the cooked pasta and let simmer until sauce is creamy and coated throughout.
  6. Remove from heat, serve and top with fresh parsley.
