If you’re the latter, then listen up! This pesto is as easy as it comes, and made with a few simple ingredients. Highly flavourful and loaded with healthy fats and flavours that will have you making extra to put on everything you cook for a week!
The crispy “chicken” is made of Seitan – if you’ve seen any of our recipes before, you’ll know Liv’s Seitan Chick’n recipe is a recurring theme. It’s super easy to make and loaded with protein to keep you full throughout the day. The trick is to use vegan chicken broth. I know its a special ingredient, but we get it at our local bulk store!
Lastly, the cheese you choose is key. Being vegan, we haven’t always had the widest selection of choices when it came to plant-based cheeses. BUT, things are changing so fast, that there seems to be a new variety and flavour at the supermarket every other week! As you probably know, vegan cheeses all melt and react differently to different forms of cooking. For this one, I used a local brand of mozzarella that melts great, but feel free to choose your own favourite, because it’s key to keeping all the toppings on top of the toast when it melts!
