Vegan Cheesy Pesto Toast with Seitan Chicken

This isn’t just any toast… this is Vegan Cheesy Pesto Toast with Seitan Chicken!

You know that that toast that you put down in the toaster as you scramble to do a million other things in the morning? The one you end up forgetting about after it pops as you run out the door on the way to work? This Vegan Cheesy Pesto Toast with Seitan Chicken isn’t that… this is the kind of toast you dream about for lunch as you walk to work on a brisk spring morning. Sourdough bread topped with homemade vegan pesto, creamy mozzarella cheese and crispy seitan chicken.

This is the toast recipe you will come back to every week because its simple, quick and easy to prep the ingredients to have on hand. Also, it hits the spot every single time!

Now that I’ve got that overly dramatic way to introduce this Vegan Cheesy Pesto Toast with Seitan Chicken over with, lets get into why this is going to be your new favourite easy meal! If you were the one coming home after a long day of school or work, needed a snack that didn’t come from a package and wanted something super quick to whip up like I did; you’re going to relate to this one!

Why is toast the greatest food?

Well, because all the arguments for why someone claims that one thing or another is the “best food”, can also be attributed to toast! Don’t believe me? Let’s test it out. When someone says pizzas or sandwiches are the best food, because they can be made with a variety of  toppings – so can toast! When someone says ice cream is the “best food” because it can be the perfect mix between salty and sweet if you want it to – so can toast! There’s nothing better than a fresh slice of sourdough toasted with some melted butter and cinnamon sugar or strawberry jam in the morning with your coffee! When someone says salads are the “best foods” because… just kidding, almost got you there! This Vegan Cheesy Pesto Toast with Seitan Chicken is a real winner!

Whichever way you slice it (pun quite intended), toast is just one of the most versatile foods out there. Breakfast, lunch and dinner. Sweet, savoury, or both. Crunchy, chewy, and amazing loaded up with your favourite toppings! I know I don’t have to keep going on and on about the endless possibilities for toast… but it’s important to me that you know that I could.

Okay, back to why THIS Vegan Cheesy Pesto Toast with Seitan Chicken is going to be your new favourite thing!

Here’s why this recipe outmatches other toast recipes:

Toppings are what make this recipe reign supreme! If you’re this far into reading, chances are you’re a pretty big fan of pesto, seitan chicken, vegan cheese, or all three! If you’re the latter, then listen up! This pesto is as easy as it comes, and made with a few simple ingredients. Highly flavourful and loaded with healthy fats and flavours that will have you making extra to put on everything you cook for a week!

The crispy “chicken” is made of Seitan – if you’ve seen any of our recipes before, you’ll know Liv’s Seitan Chick’n recipe is a recurring theme. It’s super easy to make and loaded with protein to keep you full throughout the day. The trick is to use vegan chicken broth. I know its a special ingredient, but we get it at our local bulk store!

Lastly, the cheese you choose is key. Being vegan, we haven’t always had the widest selection of choices when it came to plant-based cheeses. BUT, things are changing so fast, that there seems to be a new variety and flavour at the supermarket every other week! As you probably know, vegan cheeses all melt and react differently to different forms of cooking. For this one, I used a local brand of mozzarella that melts great, but feel free to choose your own favourite, because it’s key to keeping all the toppings on top of the toast when it melts!

That’s all there is to it! Now you can take a break from all of my fan-boying over toast recipes, and go try it for yourself! Let me know what you think!

Vegan Cheesy Pesto Toast with Seitan Chicken

  • Author: Liv B
  • Total Time: 30 minutes
  • Yield: 2 pieces of toast

Sourdough bread topped with homemade vegan pesto, creamy mozzarella cheese and crispy seitan chicken.

For the toast:

  • 2 slices fresh sourdough bread
  • 4 tbsp pesto
  • 2 tbsp vegan parmesan
  • 1/2 cup vegan cheese
  • 1/2 cup chopped seitan chicken

Seitan Chicken:

  • 1 cup vital wheat gluten
  • 1 tbsp nutritional yeast
  • 1 tbsp chickpea flour
  • 3/41 cup vegan chicken broth or vegetable broth

  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs
  • 1 tbsp paprika salt & pepper to taste
  • 21/2 cups broth for simmering
  • oil for frying

  • 3/4 cup cashews
  • 1/4 cup basil leaves
  • 1/4 cup kale
  • 1 clove of garlic
  • Juice of 1/2 lemon
  • 1/4 cup water
  • generous pinch of salt

  1. Make the seitan chicken: Whisk together seitan dry ingredients until combined. Add broth and stir until it forms a dough ball.
  2. Knead a few times with your hands until dough has no dry spots.
  3. Add rest of broth to instant pot. Rip off chunks of seitan and add to pot. Cook on “manual” for 15 minutes. Once it is done, quick release steam.
  4. Meanwhile, whisk together breading ingredients. When seitan is done, toss in the breading mixture until coated.
  5. Heat a large frying pan with oil. When hot, add seitan and fry a few minutes per side until crispy and golden brown. Remove from pan and plate into a paper towel-lined bowl to rest.
  6. Make the pesto: Add pesto ingredients to a blender or food processor and purée until smooth(ish).
  7. Onto each slice of bread, layer the pesto blend, vegan cheese, and seitan chicken and bake at 375 F for 10 minutes, or until cheese is melted and bread is toasted.
  8. Sprinkle vegan parmesan over top, serve and enjoy!

Store leftover seitan chicken in a container in the fridge for up to 5 days. Reheat in a frying pan or in the oven until crispy.

  • Prep Time: 30 minutes

  1. It looks amazing ! Do you have an other way to do seitan if we don’t have a instant pot (or an airfyer) ? 🙂
