Is it really THAT easy!?

The answer to that is just as easy as this dish – YES! It’s almost too good to be true. Too bad I don’t believe in the concept of something being TOO good! That said, this is pretty close. As seen in the video, this Vegan Instant Noodle Sriracha Mac is all done in one pot! No need to dirty any extra dishes, or put a huge amount of time into it because this can all be made in under 10 minutes!

Like any of my recipes, I leave them pretty open to be changed at will, depending on individual taste and preference! This is no exception. Don’t like garlic powder? Feel free to mince some fresh garlic! Don’t like sriracha? Use franks red hot or nothing at all to dull the heat! Whatever your preference, feel free to have fun with this one because the basic foundation of this recipe comes down to its simplicity!

What makes this different from other Mac-and- Cheese recipes?

Well, a few things! But let me start with my favourite part – THE NOODLES! This is easily the coolest part of this recipe. I know we’ve all seen one-pot pasta and Mac-and-cheese dishes in the past. And even some that have been vegan. But what makes this great, is that you don’t have to boil the noodles separately! This Vegan Instant Noodle Sriracha Mac is all done in one pot in under 10 minutes thanks to the wonders of instant ramen noodles. Easily found at any grocery store, and packaged individually for the perfect serving size. This one-pot Vegan Instant Noodle Sriracha Mac would have completely changed my entire university experience if I had come up with it sooner!

I should also mention that the sriracha plays a key role here. The dish will be delicious without it, however, it adds the perfect depth of flavour to switch it up from your every-day Mac-and-cheese. Of course we’re all aware of how easy it is to add sriracha to just about everything (I know I have to just about every boxed food product since I first tried it!)… but trust me on this one, you’ll want to at least give this Vegan Instant Noodle Sriracha Mac a try!

Ingredients

  • 1 1/2 cups water
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tbsp dijon mustard
  • 1 package instant ramen noodles
  • 1/2 cup plant-based milk
  • 1/2 tsp paprika
  • 1 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1 tbsp tahini
  • 1/2 tbsp sriracha
  • 1 cup vegan cheese shreds
  • 1 tsp fresh parsley

Instructions

  1. In a small pot, add water and bring to a boil. Add salt, garlic powder, and dijon. Stir to combine.
  2. Add the instant noodles. Stir and let simmer according to package instructions for about 2-4 minutes until most of the water is absorbed and the noodles are al dente.
  3. Add milk, paprika, lemon juice, tahini, nutritional yeast, sriracha and vegan cheese shreds. Stir until combined and cheese is melted. Serve immediately.
  4. Optional: top with more sriracha and chopped fresh parsley. Enjoy!
