Introducing one of my favourite new creations: The Double Smash Bruschetta Burger! Crispy fried buns, two smashed vegan burger patties, homemade bruschetta and vegan feta, stacked to perfection!

My first question is, how is this not more common?! I will be first to admit, the idea for this Double Smash Bruschetta Burger never once popped into my head, despite the countless times I’ve been out to family restaurants, ordering bruschetta as an appetizer and burger for a main…

But how is it that it never occurred to me to combine the two? Until now, that is. I can’t take all the credit though, it wasn’t until I was introduced to the first vegan feta cheese that actually crumbles and resembles the real thing, before bruschetta even entered my brain! For me, bruschetta and good feta (vegan of course) go hand-in-hand to make the perfect pair. And what could make a vegan bruschetta even better you ask? Stick it on a burger of course!

This is all vegan?!

That’s right! It’s truly amazing what can be done in the comfort of your own home these days, and with very little effort too! Now, I’m not against breaking a little sweat in the kitchen from time to time. I often have daydreams of being a line cook at a busy diner on a Saturday afternoon, cooking delicious food for hungry customers! BUT, being able to pop into the grocery store, buy your favourite vegan cheeses and meats, a fresh loaf of bread and some veggies, only to come home and cook them for 10 minutes on the stove for restaurant quality food is definitely not something I am against!

In fact, making these kinds of burgers and sandwiches that combine fresh ingredients with ready-made products has become one of the things I enjoy doing most. So let me show you why this Double Smash Bruschetta Burger is going to change your summer BBQ season for the foreseeable future…

How it’s made:

Short answer, very easily! But let me bore you for a moment with the long answer. It all starts with fresh ingredients, of course! A burger like this Double Smash Bruschetta Burger already has enough packaged ingredients to make this as easy as can be, for added convenience in the kitchen. We love that!

But, what takes an ordinary burger and turns it into something special is the contrast of fresh ingredients. I always recommend, where possible, to shop at a local farmers market for fresh produce. But that’s not always possible and store-bought ingredients like fresh Roma tomatoes, home-grown or store-bought basil leaves, and quality olive oil and balsamic vinegar take this ordinary classic to the next level.

On top of all that, you have a new ingredient on the market right now that hits the taste buds in all the right ways! This was my first attempt at a sandwich using Daiya’s new Feta flavoured block and it’s definitely the best I’ve had yet! Feel free to use whatever feta-style cheese you have on hand of course, but keep a look out for this one because it’s officially my new summer go-to!

Lastly, smash your burgers! Mostly, because why not? But also, practically speaking, smashing the burger is much preferred these days as the patties can then stretch out to fit the size of any fresh bakery bun, which are often much larger than the boring old pack of hamburger buns that aren’t freshly baked. Optimizing the burger to bun ratio is a key reason why this Double Smash Bruschetta Burger tastes better than any others I’ve had.

Double Smash Bruschetta Burger

Description

Introducing one of my more proud creations, The Double Smash Bruschetta Burger. Crispy fried buns, two smashed down vegan burger patties, homemade bruschetta and vegan feta stacked to perfection!


Ingredients

  • 1 fresh burger bun
  • 2 Beyond Meat patties (or your favourite uncooked vegan patties)
  • 1 tbsp vegan butter
  • 1/2 tbsp minced garlic
  • 1/4 cup crumbled Daiya Feta Block
  • salt and pepper to taste

The Bruschetta

  • 1 medium diced roma tomato
  • 1/8 cup chopped basil
  • 1/2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1/2 tbsp minced garlic

Instructions

  1. In a medium frying pan over medium heat, add 1 tbsp butter, minced garlic and burger buns face down. Toast until golden brown and crispy. Remove from heat and set aside.
  2. In the same heated pan, add burger patties, salt and pepper. With a sheet of parchment paper, cover each burger in the pan and firmly press down until burgers are squished flat but not broken apart.Let cook 3-4 minutes on each side until dark brown and crispy on the edges.
  3. Meanwhile in a small bowl, mix together all bruschetta ingredients until fully combined. Set aside.
  4. Layer the two patties on top of the bottom bun, then add the bruschetta and vegan feta.
  5. Serve hot and enjoy!
