Sticky Sesame Tofu and Corn Pita Pockets

Description

Homemade sticky, tangy and slightly sweet sesame tofu stuffed inside a pitas with crisp lettuce and a creamy cheesy corn & basil slaw.

Ingredients

Tofu:

  • 1 block firm tofu, pressed and ripped into bite-size pieces
  • 2 tbsp flour or corn starch
  • oil for pan frying

Sticky Sesame Sauce:

  • 3 tbsp soy sauce
  • 2 tbsp maple syrup
  • 2 tbsp ketchup
  • 1 tbsp sriracha (or less if you like it less spicy)
  • 2 tsp sesame oil
  • 12 cloves of garlic, minced

Corn Slaw:

  • 1 cup corn
  • 3 tbsp vegan mayo
  • 2 tbsp freshly chopped basil
  • 1/2 cup vegan cheese

Pita Pockets:

  • 2 pitas, cut in half to make 4 pockets
  • 2 cups shredded lettuce

Instructions

  1. Toss tofu with cornstarch or flour until coated.
  2. Heat a frying pan on medium-high and add a few tbsp of oil. Add the tofu when hot, panfry about 5-6 minutes until starting to crisp up.
  3. Stir together sauce ingredients.
  4. Turn heat back to medium and add the sauce. Cook until sauce has thickened and starting to get sticky around the tofu, about 3-4 minutes.
  5. Stir together corn slaw ingredients.
  6. Assemble the pita pockets by stuffing with some lettuce, corn slaw and tofu. Enjoy!
