What are your favourite meals or snacks from your childhood? What flavours bring back the care-free, nostalgic vibes of coming home after a long day at school for you? It’s not an easy answer for me! There are so many comforting meals and flavours from my youth that I’ve been dying to re-create, and I’ve gotten through quite a lot! But none so much as this recipe right here! Bagel bites were a saving grace for lunches as far as I’m concerned. We didn’t have a cafeteria, nor did I have the drive to make my own meals before school at such an early age. For me, it was all about the excitement of being able to happily and quickly  heat my favourite flavours (pizza) in a microwave so I could get back to hanging out with my friends!

These Vegan Pretzel Bagel Bites are sure to bring you back when you try them. With all the flavours and textures you loved, and made even better in the comfort of your own home! These Vegan Pretzel Bagel Bites use a simple store bought pizza dough, made into mini bagels and topped with the best vegan version of your favourite pizza toppings! Diced Vegan cheese courtesy of Daiya Foods Monterey Jack Style Block, and cubed pepperoni pieces just like you remember.

Here’s how to make them!

First, make things very very simple on yourself! These are bagel bites we’re talking about here – there’s no need to make it too complicated! Head to your nearest store and buy yourself a store-bough pre made pizza dough ball. Of course you can look up any recipe for homemade dough if you so wish. BUT, part of the beauty of bagel bites as a kid were how convenient they were. If you can, cut out the dough preparation just for this recipe and watch how easy the rest of it becomes!

… Next, dice up your toppings the RIGHT way! I can’t stress enough how important it is to get the toppings as tiny as possible. Of course, this is for visual effect only… but it’s hardly a bagel bite if the vegan cheese and pepperoni aren’t diced into tiny little cubes. We all know this isn’t the most involved of dishes, which is why making it as fun and nostalgic as possible is the key!

… Here’s where the real fun and ftexture comes in. Homemade bagels, despite buying the dough from the store hit different. This is where you’ll see the biggest change from the store bought Bagel Bite product. Soft, Chewy and perfectly golden on the outside!

… Lastly, we can’t forget about elevating that pizza flavour. Everyone knows that pizza flavour mainly comes from the sauce. Description

These Vegan Pretzel Bagel Bites are sure to bring you back when you try them. With all the flavours and textures you loved, and made even better in the comfort of your own home! These Vegan Pretzel Bagel Bites use a simple store bought pizza dough, made into mini bagels and topped with the best vegan version of your favourite pizza toppings!


Ingredients

for the sauce (2 servings)

  • 1/2 jar marinara sauce
  • 1 tbsp fresh basil leaves
  • 1/2 block silken tofu

For the bagel bites

  • 1/2 store bought pizza dough ball (330g)
  • 1 tbsp baking soda
  • 6 cups water
  • 1/2 block diced Daiya Foods Monterey Jack Style Cheese Block
  • 1/2 package diced Yves cuisine pepperoni or equivalent
  • fresh basil leaves to top

Instructions

  1. Preheat Oven to 400 degrees F.
  2. Add all sauce ingredients to food processor and blend until smooth and all ingredients are combined.
  3. in a Medium sauce pan, add the water and bring to a boil.
  4. meanwhile, prepare the bagels by cutting the dough into 8 equal pieces, forming them into small balls. Poke your finger through the centre of each and lightly stretch to form a hole in the middle.
  5. Add the baking soda then each of the mini bagels. Boil for about 3 minutes, then flip them and boil for another 2-3 minutes. Remove from heat and place the bagels separated on a baking sheet.
  6. bake the mini bagels for 20 minutes, or until golden brown on top. remove from heat and let cool slightly.
  7. cut each bagel in half and spread out on baking sheet. Top each bite with a tbsp of sauce, vegan cheese and pepperoni bits.
  8. Place he bagel bites back in the oven for another 7-8 minutes or until cheese is lightly melted and bagels are crispy on the edges.
  9. Remove from heat and let cool before serving.
