Why a calzone and not a pizza?!

Because why not! This is often my point of view when it comes to foods that should just WORK! of course we all have our preferences and pickiness when it comes to eating (I hate pickles and mushrooms and there’s nothing you can do to change my mind). BUT when you know you love a food like pizza (you have to, its a classic and imo the perfect food), then you know it’s got to taste good if the only real difference is that it’s folded in on itself!

And truly, that’s the only difference there is! I know a lot of you know this intuitively, but a calzone literally is just a folded pizza. That’s amazing to me considering the whole enjoyment and eating experience drastically varies between a pizza and calzone. To me, a pizza is meant for sharing, splitting up and customizing to fit the needs of the many (unless you’re me on a Friday night during a Lord of the Rings marathon… then a solo pizza is perfectly acceptable). On the flip side however, a calzone is the perfect made to order dish. Hot, savoury, sweet and filled with anything you could ever want as a pizza topping ALL TO YOURSELF! for me, therein lies the beauty of this Vegan Bourbon Barbecue Calzone.

Here’s how it’s done!

If I were to be cheeky and give you the really simple short answer, I would say go ahead and take your favourite pizza, and fold it in half!

But the long answer really isn’t far off from that either! In the case of this Vegan Bourbon Barbecue Calzone in particular, what you want to do is:

… Buy yourself a store bought pizza dough! It might not be romantic, but it will sure save you a lot of time in the kitchen. We of course have some dough recipes if you feel like stepping into that territory for an extra special dish (check out this chick’n n’ spinach Alfredo pizza for dough recipe). But if you’ve made any of my recipes before, you know I’m always a fan of streamlining the process if I find it truly valuable or substitutable!

… next all you have to do is fry up the bbq sauce with your meat toppings, add it to the pizza dough on one side and fold it in half!

… Lastly, you guessed it. Toss it in the oven with a light baking soda wash for optimal golden brown top and crunchy sides. The centre should be nice and soft, and of course, steaming hot!

Description

This Vegan Bourbon Barbecue Calzone is packed full of bourbon barbecue sauce, soy curls, Vegan cheese all inside a hot pocket of dough! Give this a try this week because the delectable blend of sweet and savoury, soft and crunchy will have you coming back week over week!


Ingredients

Optional – Beer Dough:

  • 2 1/2 cups all-purpose flour
  • 2 tsp instant yeast
  • 1 tsp salt
  • 330 mL (1 bottle) room temperature mild beer like a pale ale or lager
  • 1 tbsp oil

Calzone

  • One batch of beer dough or store bought pizza dough ball
  • 2 tbsp vegan butter
  • 1 cup dehydrated soy curls
  • 1/4 cup barbecue sauce
  • (optional) 1 tsp bourbon
  • 1 cup vegan cheese shreds (I used @daiyafoods)
  • 1 tsp parsley
  • 1 clove minced garlic
  • pinch of salt and pepper to taste
  • 2 tbsp water
  • 1/4 tbsp baking soda

Instructions

  1. Preheat oven to 425 degrees F.
  2. Roll out the dough to approximately a 10-12 inch diameter circle and add to a large baking sheet.
  3. In a medium frying pan, add the soy curls, and vegan butter. Fry until golden brown and lightly crispy on most sides.
  4. Add the bourbon, garlic, barbecue sauce, and parsley, salt and pepper. Stir for 3-4 minutes until heated throughout and soy curls are coated in sauce. remove from heat and set aside.
  5. meanwhile, in a small dish mix together water and baking soda. Set aside.
  6. On the pizza dough, layer the soy curl mixture and vegan cheese to one side into a “half moon” pile.
  7. Fold over the calzone and pinch all the sides tightly so as not to spill when baked. Add the baking soda wash to the top with a brush until coated, and place in the oven for 10-12 minutes or until golden and crispy on the edges and top.
  8. remove from heat and enjoy!
