This Vegan Tofu Scramble is high in protein, full of flavour, and easy to make in just 20 minutes, including a savory homemade pesto recipe. Use this vegan breakfast idea any day of the week!
Ingredients
The Tofu Scramble
- 1 Block Firm Vegan Tofu
- 2 tsp turmeric
- 4 tbsp nutritional yeast
- 2 cloves minced garlic
- 1/2 tsp onion powder
- 2 tbsp olive oil
The Pesto
- 1/4 cup water
- 1/4 cup sunflower seeds
- 1/2 cup raw cashews
- fresh basil
- pesto seasoning
- Juice from 1/4 lemon
- 4 tbsp extra virgin olive oil
- salt to taste
Instructions
- In a Medium Pan over medium-high heat, add all tofu scramble ingredients to the pan. Stir to combine and fry until warm throughout and crispy on some edges.
- Meanwhile in a small food processor, combine all pesto ingredients until mostly smooth. Add salt for preferred taste.
- In a bowl, combine tofu scramble with 1/4 cup of pesto seasoning until fully coated before serving.
OPTIONAL: Add some extra virvin olive oil and hemp seeds to garnish
