Description

Tomato jam might sound fancy, but this version is made with canned tomatoes, meaning it skips the peeling, chopping, and seasonal stress. Tasty ingredients like ginger, garlic and brown sugar amp up the flavour of this sweet-savory spread.

Ingredients

  • 1 tbsp olive oil
  • 1 small red onion, chopped
  • 2 garlic cloves, minced
  • 1 small piece fresh ginger, peeled and minced
  • 1 can (400g) diced or finely chopped tomatoes
  • 1/2 cup brown sugar
  • 1 tbsp apple cider vinegar
  • juice from one lemon
  • 1/2 tsp ground cinnamon
  • 1/4 tsp red chilli flakes (optional)
  • pinch of salt

Instructions

  1. Heat olive oil in a saucepan over medium heat.
  2. Add onion and cook for 5-6 minutes, until softened. Add garlic and ginger; cook for 1 more minute.
  3. Pour in the finely chopped tomatoes, then add sugar, vinegar, lemon juice, cinnamon, chili flakes, and salt. Stir well to combine.
  4. Reduce heat to low and simmer uncovered, stirring occasionally for 30-40 minutes, or until the jam is thick and glossy.
  5. Remove from heat and serve over fresh homemade artisan bread.
