It was a beautiful recipe testing moment when my house started smelling like a taqueria and I realized, I really didn’t need any real meat to nail that satisfying texture! Despite what some naysayers may say, a meatless taco night can be every bit as tasty. Crisp edges and soft centres for the perfect chew is what we’re chasing, and it turned into a real obsession!

Liv and I have been using this “meat” in burritos, our favourite bean-free chilli and even spaghetti sauce!

The part you usually overlook

Tofu alone doesn’t cut it anymore, people! We’re after a new generation of taco nights and this vegan ground beef recipe is my favourite. When I first started making it, I thought flavour alone was the most important thing, but it wasn’t until I added in the walnuts that a realistic texture came to life. It completely revolutionized how my Big Mac Orzo Pasta salad Turned out! Here’s what I learned after running this through more pans than I like to admit, and what you usually forget to do too:

  • Crumble size matters! Too fine and it turns to paste, too large and it’s just some tofu with chunks of walnuts in it.
  • You don’t let parts of it almost burn. The edges and caramelization are where flavour lives.
  • Soy sauce is an ingredient that somehow eluded me for too long. The unmistakable umami it brings might be one of the things you’re missing from taco night.

The beauty of cooking meatless meat

Give it a little taste test! One thing I love about cooking this dish, like many others, is that everybody loves a different amount of spice and flavour balance. Since tofu is precooked, you don’t have to wait too long to start taste testing and adjusting your seasonings.

Don’t stir it to death

Most people do this subconsciously, or without thinking at all. But a trick I learned early on in my recipe testing is to not over-stir! Sounds simple, but letting the pan do it’s job, and enough time on the heat will bring out those golden brown bits a lot quicker and more evenly than if you’re constantly jostling the taco meat. Browning and crispy edges all come from contact time. A few things that matter here are:

  • Press your tofu well, or you’ll end up steaming the whole batch, not frying it. We want that extra moisture gone.
  • Start on a higher heat and slowly turn it down as crumbles start to brown.
  • Don’t toss the seasoning in as an afterthought. I find it best works when added in from the early stages.

Let it sit, and your patience will be rewarded

This, in my experience, is one of those things you don’t really think will make a difference. Or at least, that’s what I tell myself when I’m hungry. But it does!

It’s good right off the pan, but give it 5-10 minutes to sit before digging in and watch the flavours come to life. The texture will tighten up too, which is the other benefit. But it also gives the seasoning time to settle, and I honestly love it even better the second and third day when I want to make taco night a week-long event.

Pan-Fried Tofu Taco Meat with Walnuts

Description

These vegan taco crumbles are the key to a meatless taco night! Crispy and built to hold up under the rest of your toppings, this crumble is made with firm tofu, walnuts and bold taco seasoning that for a satisfying texture that’s close to the real thing. It’ll make you forget why you ever used plain tofu at all!


Ingredients

  • 3 tbsp vegan butter
  • 1/2 large white onion, finely chopped
  • 1 package (350g) extra firm tofu, crumbled
  • 1 1/2 cups finely chopped walnuts
  • 3 tbsp soy sauce
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 2 tsp oregano
  • salt and pepper to taste

Instructions

  1. Heat a large pan with vegan butter over medium heat. Add the onion and cook until translucent, then add the walnuts and crumbled tofu.
  2. Let sit in pan, stirring every 2 minutes or so. Once sightly browned and crispy on most edges, add soy sauce, smoked paprika,  chilli powder, cumin, garlic powder, oregano and salt and pepper. Cook, stirring occasionally, until browned and most of the moisture has evaporated  from the tofu. It should look crumbly like ground beef.
  3. Set aside to cool and add to your favourite taco night dish!

Notes

Store leftovers in an airtight container in the fridge for up to 5 days.
