Description

This almond milk blueberry iced latte is an amazing way to start your day! Made with rich espresso and sweet blueberries, this vegan latte takes just minutes to make at home.


Ingredients

Blueberry syrup:

  • 1/2 cup wild blueberries
  • 1/2 cup water
  • 1 tablespoon white granulated sugar

Almond Milk Latte:

  • 2 double shots of espresso
  • 1 cup almond milk
  • 2 handfuls of ice for serving

Instructions

  1. Add the blueberries, water, and sugar to a pan or small pot. Bring to a simmer. mash lightly and simmer a few minutes, until thickened slightly.
  2. Add to a blender and blend until smooth.
  3. Add 2-3 tbsp of blueberry syrup to your serving glasses. Add a handful of ice cubes to each, followed by 1/2 cup milk and a double shot of espresso.
  4. Stir well and enjoy!

Notes

Leftover syrup can be stored in a jar or airtight container in the fridge for up to one week.
