Add the vegan butter to a pot on medium heat and let it melt. Add the onion, tomatoes, water, salt and basil and stir to combine.
Bring to a simmer and cook 30-40 minutes.
Blend until smooth. TIP: take the little middle cover out of the blender lid so there is an opening for steam to escape. I like to cover the hole lightly with a dish towel and blend on low so nothing splatters or explodes!
