1 cup butternut squash soup or make your own (tons of recipes online) and use that.
1/3 cup vegan cheese or 1/4 cup nutritional yeast
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp paprika
salt and pepper to taste
1 tbsp flour if you need to thicken it.
Boil the pasta. Drain and set aside. In a pot, add the soup, cheese and spices. Stir and heat until combined and melted. If it is too runny for your liking, add the flour and whisk to combine. Heat it for a few more minutes and it will thicken. Add the pasta and stir to coat it in the sauce. Add the spinach and cook for 1 minute. Enjoy!
