2 portobello mushrooms, sliced
1/3 cup of your favourite BBQ sauce
salt and pepper to taste
2 6-inch sub buns
In a frying pan, add mushrooms with a splash of water. Cover and cook for 5 minutes or until mushrooms have softened. Add BBQ sauce salt and pepper and saute for 3-5 minutes until sauce becomes thick. Add the BBQ mushrooms to the sub buns and top with vegan cheese. Place in an oven or toaster oven on 350 F and bake for 5 minutes (or longer if needed) until cheese melts and subs are toasted. Garnish with fresh basil. Enjoy!
