Mini Lentil Loaf Cups:
1/2 white onion, chopped into small pieces
1 carrot, chopped into small pieces
1 tbsp oil (or water for cooking the vegetables)
1 can (19oz.) lentils
1 tbsp ground flax + 3 tbsp water (mix and let sit 5 mins)
2 tbsp ketchup
1 tsp dried oregano
1 tsp dried parsley
salt and pepper to taste (about 1/2 tsp of salt and 1/4 tsp pepper)

Mash the lentils fairly well (a bit more than I did in the video). Add all other ingredients and stir. Pack into greased muffin cups. Bake at 400F for about 20-25 minutes, checking to make sure they don’t burn. You want them to feel firm to the touch. Let cool for a bit before attempting to remove or they can break.
